This Week on Better Plates: 6 Simple Healthy Meals
A five-minute smoothie, bread that cooks in the microwave, and a steak dinner that hits 75 grams of protein.
Six simple healthy meals came through this week, and half of them need under 10 minutes on the stove. Monday opened with a tahini smoothie and Saturday closed with french toast that tastes like an egg sandwich. In between came fajitas for two on Tuesday, a gluten-free breakfast sandwich Wednesday built on bread that cooks in four minutes, kimbap on Thursday, and a chocolate pistachio cake Friday made without refined flour. If you want easy healthy recipes rather than a weekend project, this is the week for it.
Cherry Tahini Smoothie — Monday

“The tahini adds healthy fats, creaminess, and a unique depth of flavor,” Alexa Nallen writes, and that is the whole argument for putting it in a smoothie. Frozen dark sweet cherries, banana, and vanilla Greek yogurt go in with it, plus a splash of vanilla and a pinch of salt. She tops it with sesame seeds, cacao nibs, and a tahini drizzle for “texture and richness.”

Steak Fajitas with Avocado Sauce — Tuesday

The beef marinates in olive oil, lemon, and spices before it cooks down with the bell peppers and red onion. “I like serving them with plain yogurt on the side for a cool and creamy contrast,” Aysel Jafarova writes. Three small fajitas per person.

Gluten-Free Breakfast Sandwich on Microwave Oatmeal Bread — Wednesday

The bread is oat flour and, as Yunon puts it, “made entirely in the microwave, creating a soft, fluffy texture without needing an oven or air fryer.” She layers it with fresh vegetables, ham, a fried egg, and a creamy lemon sauce, and suggests swapping the mayonnaise for plain Greek yogurt “for a lighter, higher-protein option.”

Tofu Veggie Kimbap — Thursday

“Similar to Japanese sushi but has distinctly different flavors,” Jamie Lin writes of the Korean seaweed-and-rice roll. Hers is stuffed with tofu and colorful vegetables, then sliced into bite-sized pieces, which she points out makes it “a great dish for picnics, on-the-go meals, gatherings, and more.” Simple swaps make it gluten-free.

Dark Chocolate Pistachio Cake — Friday

Built without refined flour or white sugar. Shreyat’s sponge is oat flour, cacao, Greek yogurt, and honey, and the cream is pistachio butter, more Greek yogurt, honey, and vanilla. “Oat flour adds fiber, Greek yogurt adds protein, and pistachios provide healthy fats,” he writes, with honey doing the sweetening.

Savory French Toast — Saturday

/
“Instead of a sugary cinnamon vibe, you are getting the taste of an egg sandwich,” Dina Deleasa-Gonsar writes. “I feel like this can almost beat out avocado toast!” Thick bread, egg for the protein, four minutes in the pan, and she makes the case for it as breakfast for dinner.
