Ingredients

For the Peach Compote

Ripe peaches, diced 2
Fresh lemon juice 1 tbsp
Honey 1 tbsp
Water 1 tbsp
Vanilla extract ½ tsp
Cinnamon ¼ tsp

For the Yogurt Bowl

Low-fat Greek yogurt of choice 1 cup
Peach compote (reserve remaining half for another bowl) Half
Pumpkin seeds 1 tbsp
Fresh raspberries ¼ cup
Coconut flakes 1 tbsp

Step-by-Step Instructions

1 Make the peach compote

Add the diced peach, lemon juice, honey, water, vanilla extract and cinnamon to a small saucepan over medium heat. Cook for 5-8 minutes, stirring occasionally, until the peaches are soft and juicy.

2 Cool

Remove from the heat and let the compote cool slightly.

3 Build the bowl

Spoon 1 cup Greek yogurt into a bowl.

4 Top

Top with half of the peach compote, including some of the juices. Reserve the remaining compote for another serving.

5 Finish
