  • High-Fiber

A tart that sets in the refrigerator, on a crust you press in with your fingers.

This No-Bake Blueberry Yogurt Tart boasts around 4 grams of fiber per serving with just 15 minutes of prep. The oat-and-banana crust comes together without baking or nut butter, while Greek yogurt and blueberries create a creamy, fruity filling without cream cheese. It’s also budget-friendly, using simple ingredients you may already have on hand. The oats add fiber and give the crust enough structure to stay together, while banana helps naturally sweeten and bind the mixture. Finish it with a quick blueberry chia sauce for extra berry flavor and a little texture. It’s an easy way to make a creamy, satisfying dessert without an oven, expensive ingredients, or a complicated ingredient list. The gelatin is what holds the filling at a sliceable set, which is why the tart cuts clean instead of spooning out.

Why This Works

The oats, blueberries, banana, and chia seeds do most of the nutritional heavy lifting here, adding fiber while keeping the tart naturally sweet and satisfying. Greek yogurt also adds a boost of protein, making this a more balanced dessert without needing cream cheese or nut butter.

Ingredients

For the Tart Base:

Oats 1 cup
Banana ½ medium
Honey or maple syrup 1 tbsp
Coconut oil, melted 1 tbsp

For the Blueberry Yogurt Filling:

Blueberries, fresh or frozen ¾ cup
Greek yogurt ¾ cup + 1 tbsp
Honey or maple syrup 3 tbsp
Lemon juice 1 tbsp
Vanilla extract 1 tsp
Gelatin 2 tsp
Water, for blooming the gelatin 2 tbsp

For the Blueberry Chia Sauce:

Blueberries, fresh or frozen ¾ cup
Honey or maple syrup 1 tbsp
Water 1 tbsp
Chia seeds 1 tbsp

Step-by-Step Instructions

1 Make tart base

Add oats, banana, honey (or maple syrup), and melted coconut oil to a blender.

2 Blend to a dough

Blend until a sticky dough forms. Add a little water if the dough is too dry or difficult to blend. If the dough is too sticky, add a little more oats.

3 Press it in

Press the dough firmly into the tart mold, covering the bottom and sides evenly. (Grease the tart pan lightly with coconut oil to help the tart release easily once set.)

4 Chill the base

Keep it chilled in the fridge.

5 Make blueberry yogurt filling

Bloom the gelatin by mixing gelatin powder with water, then microwave for a few seconds until fully dissolved.

6 Combine the filling

Add the blueberries (defrosted blueberries if you use frozen), Greek yogurt, honey (or maple syrup), lemon juice, vanilla extract and dissolved gelatin to a blender.

7 Blend

Blend until smooth and creamy.

8 Fill the tart

Pour the blueberry yogurt filling into the prepared tart base and smooth the top evenly.

9 Set it

Refrigerate for 2–3 hours, or until the filling is fully set.

10 Make the Blueberry Sauce

Add the blueberries, honey (or maple syrup), and water to a small saucepan.

11 Cook the sauce

Cook over medium heat for about 3 minutes, mashing the blueberries as they soften.

12 Add the chia

Remove from the heat and stir in the chia seeds.

13 Let it thicken

Let it sit for 10 minutes, or until the chia seeds have thickened the sauce.

14 Slice the tart.

15 Serve

Drizzle with the blueberry chia sauce, and enjoy!

Notes & Tips

  • No banana? No problem! Replace the banana with 50 g (about 3 tbsp) unsweetened applesauce. It helps bind the oat crust while keeping it soft and easy to press into the pan.
  • Make-ahead friendly: Store the tart covered in the refrigerator for up to 3 days.
  • Fresh or frozen: Both fresh and frozen blueberries work well for the yogurt filling and blueberry sauce.
  • Honey or maple syrup: Use either one depending on your preference.
