Lean ground turkey simmered in bone broth and piled into crisp butter lettuce cups — 34g of protein, 9g of carbs, 30 minutes.
These 30-minute, high-protein turkey lettuce wraps boast 34 grams of protein per serving with just 7 grams of net carbs. By simmering lean ground turkey with bell peppers, garlic, and rich bone broth, you get all the deep, savory flavor of classic taco night without the heavy calorie hit.
Swapping traditional tortillas for crisp butter lettuce creates a fresh, crunchy base that lets the spiced turkey shine. Plus, using no-salt bone broth adds rich flavor and an extra protein boost while keeping sodium in check. And the best part is that it comes together in a single skillet in just under 30 minutes.
Why This Works
Simmering the turkey in bone broth gives every bite extra protein and savory moisture without adding excess sodium or fat. Combined with lean ground turkey, this powerful combo boasts a massive 34 grams of protein per serving while keeping carbs low with the butter lettuce cups.

Step-by-Step Instructions
1 Brown the turkey
Heat the olive oil in a skillet over medium heat. Add the turkey meat, diced onion, red peppers, and salt. Cook until the onions soften and the turkey starts to cook through, about 5 minutes.

Add the garlic and taco seasoning, and cook for 1 minute.
3 Simmer
Pour in the bone broth and stir. Simmer until the turkey is cooked through, adding more broth if needed, about 5–7 minutes.

Finish with the ketchup and apple cider vinegar.
5 Assemble
Fill lettuce cups with the spiced turkey meat. Top with your favorite toppings!
Notes & Tips
- Store the spiced turkey filling and separated butter lettuce leaves in separate airtight containers in the fridge for up to 4 days. Assemble just before eating so the lettuce stays crisp.
- Swap ground turkey for extra-lean ground beef, bison, or ground chicken.
- If butter lettuce isn’t available, romaine hearts work great as sturdy vessels, and coconut aminos can be used in place of the ketchup/ACV combo for a tangy kick.
- Double the recipe easily in a larger skillet for extra meal prep — just make sure not to overcrowd the pan so the turkey browns nicely rather than steams.
- Keep in mind that the nutrition information reflects the base turkey and lettuce cups. Adding toppings like avocado, shredded cheddar, or Greek yogurt will boost the healthy fats and protein, so adjust your counts based on your build!
