The Five-Second Rule: Does It Actually Hold Up?

The five-second rule won’t protect your food from the floor.

It happens to everyone. You put that delicious morsel toward your mouth for that succulent bite you’ve clamored for all day, but then the unthinkable happens: fate strips the snack from your grasp. Your nemesis, gravity, pulls the food toward the floor. Upon smacking to the ground, you invoke a divine rule to spare the grizzly — and hungry — future.

“Five-second rule!”

You pick up the food and scarf it down. It’s got a slightly off taste from whatever unwanted spices were on the floor, but everything’s fine, right? Well, not quite.

What You Should Know

Point blank: the five-second rule is a myth. Various foods, from sweet to savory, can become significantly contaminated. So much so that, as delicious as it might have been and regardless of how long you craved it, the risk of ingesting unwanted bacteria is essentially guaranteed.

Three separate studies on bacterial transfer all point the same way. In one, Salmonella moved onto bologna almost instantly once the meat hit a contaminated surface — and the bacteria survived on dry surfaces for up to a month. Another found that moisture was a major factor in how contaminated the food became.

Going Deeper: What the Research Shows

It seems that moisture matters most. On hard surfaces, watermelon and bread picked up bacteria almost completely, with buttered bread and gummy candy close behind. Surface mattered, though: bacteria transferred most readily across hard surfaces like tile and steel, while transfer from carpet was much lower.

In a controlled environment, 128 scenarios involved dropping watermelon, white bread, white bread with unsalted butter, and Haribo Strawberries gummy candy on stainless steel, ceramic tile, wood, and carpet.

At the extremes, watermelon transferred the most bacteria (up to 97%), followed closely by plain white bread (up to 94%). The butter offered a slight barrier, but buttered bread still reached up to 82%. Even the gummy candy — the least absorbent option — hit up to 62% under the worst conditions. Transfer was lower with a fast pickup than with longer contact, but the researchers still measured meaningful transfer in under a second, which is exactly what disproves the five-second rule.

There is some uncertainty about the pressure applied or the friction from contact with the contaminated surface, but some research suggests that greater pressure or friction can worsen contamination.

The five-second rule applies not only to food but also to medical instruments. It was found that when polyethylene medical instruments were dropped on the floor, they were rapidly contaminated with “clinically important pathogens.” The recommendation in those circumstances is to replace the tools or immerse them in a sterilizing detergent.

Unfortunately for food, a quick water rinse is not the same as sterilizing detergent immersion. If there are pets in the household, they could track who-knows-what kind of bacteria onto the floors.

The Takeaway

If you drop food on the floor, toss it. A rinse won’t save it, and the risk of ingesting unwanted bacteria isn’t worth the trade-off. Hopefully, now that you know the five-second rule is bogus, you can overpower any craving trying to convince you otherwise.

Bottom Line

Food is undoubtedly contaminated with unwanted bacteria almost immediately upon contact with the floor. While some surfaces, such as tile and hardwood, are easier for bacteria to travel on, none were effective at preventing bacterial transfer. 

Multiple studies support rapid bacterial transfer, as well as the long duration these bacteria can persist on food, even after a quick rinse. If you drop food on the floor, forget about invoking the five-second rule. It won’t protect you the way our childhood selves thought it would.
