A jar of blueberry jam that takes fifteen minutes and one saucepan.

This recipe is great for meal prep or for brunch time dessert. The fresh blueberry jam with a hint of mint makes this yogurt parfait special enough to serve to guests. However, it’s still simple enough to make on a whim. In the midst of a busy morning it is such a treat to pull out a pre-made jar. I also love having this on hand for weekend guests.

Why This Works

The xanthan gum is what lets the jam set in fifteen minutes instead of the long reduction a pectin jam needs.

Ingredients

Yogurt

Nonfat plain Greek yogurt 2 cups
Honey 2 tbsp

Blueberry Jam

Fresh blueberries 2 cups
Maple syrup 1 tbsp
Water 3 tbsp
Xanthan gum 1/4 tsp
Lime juice 1 lime
Fresh mint 1 sprig

Step-by-Step Instructions

1 Sweeten the yogurt.

In a medium size bowl, add the yogurt and the honey. Mix until well incorporated, set aside.

2 Dissolve the xanthan gum.

In a small cup, add the 3 tbsp of water and xanthan gum and stir to dissolve.

3 Simmer the jam.

In a medium size sauce pan, add the blueberries, maple syrup, water mixture, lime juice and mint. Bring to a simmer, stirring occasionally over the course of 15 minutes. Until the mixture thickens and coats the back of the spoon. Remove from heat and let cool.

4 Layer and chill.

Separate the yogurt between glass jars approximately 11 oz each. Spoon ½ cup of yogurt into each jar and top with desired amount of blueberry jam.

Notes & Tips

  • Add granola: Add a layer of your favorite granola prior to serving.
  • Jars or a big bowl: Meal prep these into individual jars for the week or make it all one batch in a larger glass bowl for guests. You could also keep the yogurt and blueberry jam in separate containers or serving bowls letting guests build their own bowls.
  • Substitutions: If you do not have a lime, lemon juice also yields a great flavor. Same thing goes for the mint — if you omit it, the jam still has a wonderful blueberry taste.
