Milk of choice ¼ cup
Baking powder 1 tsp
A pinch of salt

Olive oil 1 tbsp

Step-by-Step Instructions

1 Make the oat flour

If using whole rolled oats, blend them into a fine oat flour.

2 Mix the batter

In a bowl, combine the oat flour, egg, milk, baking powder, and salt. Whisk until smooth.

3 Fill the container

Pour the batter into a parchment-lined 12 x 12 cm (about 5 x 5 inch) microwave-safe container.

4 Microwave

Microwave at 600W for 4 minutes, uncovered. Let the bread cool completely.

5 Prep the vegetables

Meanwhile, thinly slice the tomato and cut the cucumber into thin diagonal slices.

6 Fry the egg

Heat a lightly greased skillet over medium heat and cook the egg until the whites are set and the yolk reaches your desired doneness. Set aside.

7 Make the sauce

In a small bowl, whisk together the greek yogurt, olive oil, salt, pepper and lemon juice until smooth.

8 Slice and sauce the bread

Once the bread has cooled completely, slice it horizontally into two slices, then spread the sauce evenly over the cut sides of both slices.

9 Layer

Layer the lettuce evenly over the bottom slice. Add the tomato slices. Add the cucumber slices. Add the ham. Place the fried egg on top. Finish with another layer of lettuce. Top with the second slice of bread, sauce-side down.

10 Rest and serve

Wrap the sandwich tightly in parchment paper and let it rest for 5–10 minutes. Slice the sandwich in half and enjoy!
