These Melon Caprese Skewers are one of the easiest recipes you can make in under 30 minutes. It’s a fun twist on the classic caprese, substituting the tomato with cantaloupe, for a fresh and juicy bite. Serve this as an appetizer or add it as a side to any meal. Each skewer comes in at 63 calories, and the sweet melon against the salty prosciutto is what keeps a platter of these disappearing. At 24 skewers per batch, they’re built for sharing.

Ingredients

Cantaloupe 1
Ciliegine 8 oz.
Prosciutto 5 oz
Fresh basil leaves 24
Balsamic glaze To drizzle

Step-by-Step Instructions

1 Ball the melon

Cut the cantaloupe in half. Scrape out the seeds then use a melon baller to create balls out of the flesh.

2 Season the mozzarella

Drain the Ciliegine then toss them in a bowl with olive oil, salt and pepper.

3 Assemble the skewers

Add a melon ball, basil leaf, about half of a prosciutto slice, and a mozzarella ball onto a skewer. Assemble the remaining skewers.

4 Finish and serve

Drizzle olive oil and the balsamic glaze on top. Finish with a sprinkle of salt. Enjoy!

Notes & Tips

  • This is best eaten within the same day, but it can keep in the fridge for 1-2 days.
  • Drizzle on the balsamic glaze just before serving.
  • For a classic tomato caprese, you can substitute the cantaloupe with cherry tomatoes.
